I’m a tad disappointed people over the years have downgraded it to just “rice”.  It was a MCW mixed seafood paella FFS sake

Paella is just another sort of rice based cooked dish

I have those too.  You can use rolled up newspaper wrapped around the inside underneath the metal grill.

I’ve just checked a few bags for size of charcoal (through the bag) and they seem decent again.

We often BBQ all year round - a throwback from my SA days (Braai).
Always used wood in SA (wild plum a particular fave), stood around the fire and then raked the coals when ready - perfect!
