At the end of the day it's just really poor play from Bairstow.
If he had knocked to a fielder in front of the wicket, he would have made sure he was within the crease, until the fielder had done something to indicate that the ball was dead.e g throw the ball to the bowler.
In this case because he left the ball, he just assumed the ball was dead, when clearly it wasn't. Carey didn't hang about he caught and immediately threw the ball at the wicket.
For my money there is too much of fielders taking a shot at the wicket trying to catch the batsman out of their crease. But it seems to be a thing these days.
And if you want to stop what Carey did from happening again, make it a rule that a stumping can only be legal if the fielder is holding the ball when the bails are removed.
