Slippery slope. Most religions have darker sides which aren't fully aligned with the law. This kind of ruling opens the door for any group of weirdos to impose their opinions on all of us.

My view is if you want to defy common sense and try to live without any animal-based protein, it's up to you. But I deplore the huge increase in availability of highly processed vegan foodstuffs which have travelled far around the world. "Extinction Rebellion activist vs. Ethical Vegan" is a fight to the death I'd love to see. While eating a nice venison steak.

The only way this is helping to avoid accidental crashes with birds or insects (wtf!?!) is if this guy is really good at convincing the driver to aim for birds when he takes the bus, and is compelled to do that against his will.

The insects are gonna be hit anyway, sorry.

Insect fatalities from windscreen-related incidents continue to fall year on year, despite the continuing rise in the number of windscreens. It is unfortunately a consequence of the significant drop - catastrophic in the case of some varieties - in the number of insects. Any insects he hits while on foot will simply deplete their populations further (and add to the ones splatted by the bus).

Veganism just sounds like voluntary malnutrition to me.

I'm mainly vegan in a veggie diet.  I'm not evangelical about it and most of what I eat isn't highly processed.  

The bloke in that case is a nutter and there are logical fallacies and contradictions to his "beliefs".  No different to religious beliefs/belief systems, though.

On the other hand, it makes no sense to use land and crops to feed more and more livestock to get less out than you put in and get environmental consequences that your kids will have to bear.

i recently stopped eating meat for religious / ethical reasons. A lot of the people i know involved in the same group are vegan for the same reasons, but i am not convinced its really as sustainable as many like to think.
You can have a healthy vegetarian diet, but from what i understand its really difficult for vegans without taking supplements. If you cant get all your required nutrients from the food you are eating, then your diet is not right imo. Having said that, many people who eat meat or are vegetarian also have very unhealthy eating habits.
My main concern with this story though is something Chesh alluded to, the idea that many groups are using identity politics to enforce their beliefs and values on others or at the least, make it very difficult for those not of their persuasion.
