I think I may make a pumpkin Indian curry also.

I will buy a few and store them in the garage until ready I’m ready to cook.

I suspect with Halloween being a no go this year, there will be loads in sale at ridiculously cheap prices come November

I decided to make a Thai soup today with one of the pumpkins.

Onion
Celery
Lemon Grass. Thinly sliced (outer tough layers removed)
Kaffir lime leaves, thinly sliced
Thai red curry paste
Pumpkin
Fish sauce
Lime juice

It tastes very nice and will warm me up on my walks. 

Thoroughly recommend the above, it makes loads, cost about £1.50 and it’s very healthy too.

I’ve frozen half of the Thai soup and last night made the Indian soup and there’s about 7 litres of it. Thank his it’s bloody lovely.

I’m gonna need a bigger freezer as I still have the goulash soup to make.  Rolleyes
